“This was the result of meal prepping last week and I’ve already made a more savory version since. Although all of these were amazing, the grapefruit, coconut, + pomegranate seed topped sweet potato toast was the surprising winner! What should I top it with next time?!?!”
how to prepare
- You can peel your sweet potato if you like, or just wash and take off the wobbly bits.
- Cut into ¾ cm thick slices and toast until cooked - tender but not mushy. This could take anything from 4-8 minutes.
- Top with your favourite ingredients!
